چکیده
Processing and preservation of spices are important for assuming the quality of the end-product. Microwave processing and cooking of foods is a recent development, which is gaining momentum in household as well as largescale food applications. Processing of spices using microwaves is a newer dimension. This alternative methodology is preferred, due to the convenience and ease of handling. In Indian tradition, most of the spices are subjected to roasting before addition to food preparations. Cuminum cyminum Linn. is one widely used spice. Crushed cumin seeds are used as a condiment in a variety of dishes. Cumin seeds contain volatile oil (2-5%) that imparts the characteristic aroma to the seeds. In the present study which is conducted at Plantation Products, Spices and Flavour Technology Microwave heating and conventional roasting of cumin seeds

The influence of pulsed electric fields and microwave pretreatments on some selected physicochemical properties of oil extracted from black cumin seed
Application of novel technologies such as microwave and pulsed electric fields (PEF) might increase the speed and efficiency of oil extraction. In the present research, PEF (3.25 kV/cm electric field intensity and 30 pulse number) and microwave (540 W for 180 s) pretreatments were used to study the process of oil extraction from black cumin (Nigella sativa) seeds. After applying the selected pr...
متن کاملThe Effect of Domestic Preparation of Some Potato Products on Acrylamide Content
The influence that food heating has on the concentration of acrylamide in home-cooked potato dishes prepared by high-temperature, such as pan-frying, deep-frying, roasting and microwave heating was analyzed. The experiment was performed with commercially available deep-frozen par-fried French fries and deep-frozen par-fried potato products other than French fries (cubes, wedges, noisettes, panc...
متن کاملInvestigation on the Changes in Color Parameters and Turbidity of Cornelian Cherry (cornus mass L) Produced by Microwave and Conventional Heating
Background and Objectives: Red colored fruits such as cornelian cherry (Cornus mas L) are recognized as being healthy. The color of these fruits is an important sensory property in assessment of product quality therefore, minimizing the loss of color in the process is very important. Materials and Methods: In this study, comparison of the color, turbidity, degradation rate of anthocyanin, an...
متن کاملThe effect of microwave roasting on the antioxidant properties of the Bangladeshi groundnut cultivar.
BACKGROUND Groundnut seeds are an important source of bioactive phenolic compounds with noteworthy antioxidant capacity, which may be enhanced by the microwave roasting process. The aim of this work is to study the changes in antioxidant activity in groundnut seeds during microwave roasting, as a function of roasting time and extract concentration, in order to maximise the phenolic content an...
متن کاملEffect of Heat Treatments on Certain Antinutrients and in vitro Protein Digestibility of Peanut and Sesame Seeds
The effect of heat treatments (boiling, autoclaving, microwave cooking and roasting) on the levels of certain antinutritional factors (phytic acid, trypsin inhibitor, α-amylase inhibitor, lectin activity and tannins) and in vitro protein digestibility (IVPD) of peanut and sesame seeds were investigated. All heat treatments significantly reduced the levels of all the investigated antinutrients a...
